Before we went gluten free and before we had children, we used to go to Long Horn Steak House about twice a month. After Children we stopped going that often. After going gluten free we stopped all together. When I was on my mission to find gluten free choices when going out to eat I wrote Long Horn an e-mail. I explained why I was looking for the information I was requesting and that I really wanted to be able to take my family to their establishment again. In return the told me that they could not share anything that went on in their kitchens with me. Whether we were gluten free or not I would never eat there again. I have worked in many kitchens. If a restaurant will not let you see the kitchen then you do not want to eat there. Just trust me on this one.
My Husband would order Rocky Top Chicken and Fried Apples. I knew this was one of his favorite meals so I tried my hand at it. How hard could baked chicken topped with Bar-B-Q sauce, cheese and bacon be? It is not, but it is a bit tedious if you want it done well. As you may have guessed by now I am not a big fan of tedious.
I decided I was going to figure out a way to make this dish in one pan and make it better. Well, dear reader, I did. Now I am here to share it with you.
First you are going to need to gather your ingredients together.
- 1 pound Bacon diced
- 4-6 Skinless Boneless Chicken Breasts
- 2 large Sweet Onions sliced
- Salt and Pepper
- 1/2 cup Brown Sugar
- 1/2 cup Ketchup
- 1-2 cups shredded Cheddar Cheese
- First you are going to slice your bacon in the opposite direction that is was originally cut. This way you will have small pieces that will fry into bits.
- Cut your Chicken into bite sized chunks and set aside
- In an electric skillet or a large fry pan on the stove begin to crisp the bacon.
- While bacon is crisping slice you onions
- when bacon is crisp add your onions. Stir often so nothing sticks or burns.
- when onions are clear add chicken
- add salt and pepper to taste
- Stir regularly until chicken is cook though.
- Sprinkle on the brown sugar
- add Ketchup
- Stir to allow the sugar to melt
- If you have Liquid Smoke a dash goes nicely, but is not necessary.
- Allow your skillet to simmer for 5-8 minute.
- Stir as needed
- Serve Topped with Cheese
I like to serve this dish with white rice, corn and fried apples.
Make sure all your ingredients are gluten free.

I am so loving the way you cook. Keep putting them out for us just getting used to eating gf and always worried about eating out for fear of cross-contamination.

I am glad you are enjoying the blog. If you have any questions or requests please just let me know. I will keep cooking and writing as long as I have mouths to feed. Feeding a family of 4 gf on a very fixed income takes some juggling. But, we are not starving…and neither should you.
